The great Cristoforo Colombo along with the discovery of America made another great discovery: the sweet potatoes. In this recipe, there is a Greek-American fusion because the feta cheese is the second decisive ingredient to realize the boats or caravel 😀 The sun shines in London today and I’m thinking about the spring, hoping it come soon and when the sunbeams hit my heart I think about the Greece, one of the places where I’d escape tomorrow… that magical place where my left ring finger has worn the magical ring that brings me to celebrate my wedding in the summer (totally in love) … When you say “in the kitchen with love” 😀 For this reason I’ve chose the feta cheese… Tell me the truth with pictures, Did you’ve think about some difficult recipe ?! Sweet potatoes, feta cheese, rosemary, chives, salt, pepper
Cut the potatoes in half and let them soften in a preheated oven at 200 degrees for approximately 20/30 minutes, when you can insert the fork inside, they are ready; dig the potato pulp and add the crumbled feta cheese, rosemary, salt and pepper. Put the mixture into the potato skins and sprinkle with the chopped chives and a bit of olive oil, bake for 10 minutes in the ove and Brown as you prefer.
Secret: you can substitute feta cheese of sheep’s milk ricotta seasoned or similar cheese.
Styling: serve with rocket or as a side dish with meat or fish.
