I use it for both savory recipes and sweet; the following recipe's cookies from ginger tea and vanilla, great idea to merge to Easter cakes and maybe as a digestive tea along with a post "big" Easter lunch! The version of this recipe is gluten and eggs because of my intolerance to normal flour but for those who do not have these problems I recommend having the biacotti with normal flour. Ingredients
350 g flour
160 g dark brown sugar
150 grams of honey
150 g butter
1/2 teaspoon baking soda
2 teaspoons of cinnamon
2 teaspoons fresh ginger
1/4 teaspoon grated nutmeg
1 pinch of salt
vanilla essence
Procedure:
Mix all the dry ingredients sifted (flour, sugar, spices, baking soda and salt); Form a mound with a hole in the middle where you'll add the honey, the butter (room temperature) and vanilla essence. Knead with your hands by mixing all the ingredients until a dough, put in a bag and let rest in refrigerator for at least 30 minutes.
Trascorsco time in cool, knead the dough on a sheet of parchment paper with a rolling pin, obtaining a sheet of one centimeter; form cookies and place them on a baking sheet with parchment paper. Bake in preheated oven at 180 degrees for about 10 minutes; as always, specific cooking depends on your oven, when they start to Goldens are ready.
