This recipe sounds difficult but it isn’t! Lemon lentils and turmeric is one of my favourite dishes that fit within 30 minutes of preparation. Typically I only eat lentil soup with lemon but this time taken from the inspiration, I have enriched the recipe with turmeric and salmon.
Is a healthy protein dish, rich in omega-3 and then is delicious!
I used red lentils, which then become yellow, but you can also use regular lentils.
What I advise you to do is put them to soak for at least an hour or two in order to facilitate the cooking and digestion.
I don’t know about if you have my same issue but I when I eat legumes I get “pregnancy belly” I look like nine months pregnant… with soaked lentils I’m better.
I don’t give you precise doses because usually I cook a big amount of lentils and eat them a few times a week so I’m not measuring them with the scale.
Ingredients:
• Red lentils/normal
• Salmon fillet
• Red pepper
• Some cherry tomatoes
• Two/three lemon slices
• Parsley
• Half a white onion
• A level teaspoon of turmeric
• Extra Virgin Olive Oil.
Method:
In a pan put the salmon fillet with lemon juice. Cover with lid and cook for approximately 10/15 minutes. Depends on the size of the fillet.
Chop the onion and the red pepper and in a pot, combine all ingredients; so, onion, red pepper, cherry tomatoes, parsley and lentils previously kept to soak and then rinse.
Add water just above the level of the lentils and cook for about 20 minutes over medium heat. Once cooked, add the turmeric and olive oil and mix it to fire off.
Serve the lentils are still hot, with salmon and lemon slices that will smell the dish and they will give a fresh taste.
