Today I posted a photo on my Instagram and Facebook profiles while eating a mince Pie and many of you asked me the recipe, then I sent a series of WhatsApp messages to my English friend Katy who unveiled me her recipe secret. For those who do not know, the mince Pie is a typical English dessert that is consumed in the Christmas period and we who are cool we will prepare it with Italian treats.
What we need:
Pastry (roll or homemade)
Filling or Mincemeat.
Cups or baking tin from muffins
Round shape to cut the biscuits or a wide glass.
Ingredients for filling
2 apples
2 Pears
220 gr raisins
110 Gr Sultana Grapes
110 gr currants/plums/figs (dried) of choice among these
Juice and zest of 1 lemon
Zest and juice of 1 orange
Candied 60 gr
Cane Sugar 180 gr
Butter 60 gr
Chopped walnuts 50 gr
1 tablespoon mixed spices (nutmeg + cinnamon + cloves)
2 tablespoons of brandy or Rum
Procedure
Peel and finely chop apples and pears. In a saucepan combine all the ingredients except the brandy and cook slowly for about 20/30 minutes until all the ingredients have melted. At the end of cooking add the brandy or Rum and stir.
Cut the pastry by forming discs, helping you with a glass or shape to cut the biscuits. and cover the bottom and walls of the cups or a mold for muffins (small), also a baking sheet for muffins is fine. Add the filling and close the surface with another disc of pastry.
Bake in preheated oven at 180 degrees for about 20/25 minutes.
