- Tomato pulp or passed
- Grated Parmesan cheese
- Salt, olive oil, oregano or Basil
Wash the aubergines and cut them into strips or discs, if you have those discussions. Place them on a baking tray lined with baking paper. Pierce the surface of the Eggplant with a fork and spread a little olive oil on all slices. Bake in the oven at 180/200 degrees for 20 minutes or more, if required, until it will be cooked.
Pull out the oven and dress like a pizza; before the tomato, then capers and olives or other ingredients to taste, a leaf of Basil or oregano and Parmesan or mozzarella.
Bake in the oven again for a few minutes, until the cheese has melted and the tomato will be a little cooked.
