AUBERGINE PIE

We find ourselves! First post after returning from vacation, it is desired a nice boost to break down after more than a month in Italy and after my marriage, I will talk to post all about!! I want to immediately share this recipe because it’s Eggplant and given the time we take advantage because they still are those in season.

I am totally in love with eggplant, are good always and you can cook in a million different ways!!

This I am presenting is one cool and easy recipe that my mom made for dinner with friends, this is a starter but this isn’t a rule because it can easily become a second but someone also. What is advanced I have eaten the next day at breakfast, Aubergine pie and coffee!

Let’s go into the kitchen, preheat the oven to 180 degrees, wear an apron, equip yourself with passion and matches with the preparation!

Ingredients

Eggplant 5-200 gr of grated Parmesan cheese-300 g pork Macintata Meat-4 eggs-parsley-salt-pepper.

Proceedings 

Peel the aubergines, cut into cubes and sauté with chopped garlic. Halfway through cooking, add the meat and continue cooking.

Transfer Eggplant and meat in a bowl and add cheese (keep a little aside), parsley, eggs, salt and pepper; knead and after transfer it all into a baking pan previously greased paper.

Flatten the dough and cover with a layer of tomato sauce, a sprinkling of cheese and basil leaves.

Bake for about 30 minutes at 180 degrees.

Is Ready!

Styling: serve cut into squares with a few leaves of fresh basil.

Secrets: the pie must rest and must be served warm.
